Keep in an airtight container or bag and freeze for up to 1 month. To eat, reheat the brownie in the microwave or oven, alternatively, you can leave it to defrost overnight at room temperature.

Healthy White Bean Brownies

Ingredients
  

  • 1 ½ cup white beans
  • ½ large banana
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch
  • ¾ cup + 2 tbsp AP flour
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ cup chocolate chips
  • cup chocolate chips melted + 2 tbsp milk

Instructions
 

  • Preheat the oven to 350F and line an 8×8 pan with parchment paper.
  • In a food processor or high speed blender, blend the beans, banana, maple syrup, and vanilla extract together until completely smooth.
  • Add the cornstarch, flour, cocoa powder, baking soda, and baking powder and blend until batter forms. Add the ½ cup chocolate chips and mix in by hand.
  • Pour the batter into the pan, spread it out, and bake for 15-20 minutes.
  • Allow to cool for 10 minutes. Melt the remaining chocolate chips with some milk and spread it on the brownies. Cool for 5 minutes before serving.

Notes

NOTE* – if you are having trouble mixing, add milk 1 tablespoon at a time until you are able to get a smooth mixture for the batter.
