Healthy White Bean Brownies
Ingredients
- 1 ½ cup white beans
- ½ large banana
- ½ cup maple syrup
- 1 tsp vanilla extract
- 2 tbsp cornstarch
- ¾ cup + 2 tbsp AP flour
- 3 tbsp cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- ½ cup chocolate chips
- ⅓ cup chocolate chips melted + 2 tbsp milk
Instructions
- Preheat the oven to 350F and line an 8×8 pan with parchment paper.
- In a food processor or high speed blender, blend the beans, banana, maple syrup, and vanilla extract together until completely smooth.
- Add the cornstarch, flour, cocoa powder, baking soda, and baking powder and blend until batter forms. Add the ½ cup chocolate chips and mix in by hand.
- Pour the batter into the pan, spread it out, and bake for 15-20 minutes.
- Allow to cool for 10 minutes. Melt the remaining chocolate chips with some milk and spread it on the brownies. Cool for 5 minutes before serving.
