Description

This coffee cake is fluffy and light, paired with a sweet crunchy top drizzled with icing. It makes a great snack or a sweet breakfast to go with your coffee!

Ingredients
    Cake
  • 2 AP flour
  • cups granulated sugar
  • 1 tablespoon cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoons salt
  • 1 ½ teaspoon cinnamon
  • 2 large eggs
  • ½ cups Greek yogurt
  • ½ cups milk
  • ¼ cups maple syrup
  • ¼ cups vegetable oil
  • 1 teaspoon vanilla extract
  • Crumble
  • ¾ cups AP flour
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted)
  • 3 tablespoons maple syrup
  • Icing
  • cups powdered sugar
  • 1 tablespoon Greek yogurt
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
Instructions
    For the crumble
  1. In a small bowl, mix the flour, brown sugar, and cinnamon together. Add the melted butter and maple syrup, then mix until crumbles form.
  2. Preheat the oven to 350F and line a 9x9 square pan with parchment paper
  3. For the cake
  4. In a large bowl combine the flour, sugar, cornstarch, baking powder, baking soda, salt, and cinnamon.
  5. In a separate bowl, whisk together the eggs, yogurt, milk, oil, and vanilla extract. Fold this into the dry mixture using a spatula until jus combined.
  6. Pour the batter into the lined pan and spread it out evenly. Sprinkle the crumble so the entire surface is covered. Bake for 30-35 minutes or until toothpick comes out clean.
  7. For the icing
  8. Mix the yogurt, milk, and vanilla extract together. Combine with the powdered sugar until smooth. Drizzle onto the cake once cooled. Allow to set for a few minutes before serving.
