Vegan Peanut Butter Blondies

Description

These peanut butter blondies are so gooey, chocolatey, and delicious! They are even vegan, oil-free, flourless, and naturally sweetened!

Ingredients
  • 1 ½ cup oat flour
  • 2 tablespoons almond flour
  • ¼ teaspoons salt
  • 1 teaspoon baking soda
  • ½ teaspoons baking powder
  • cups maple syrup
  • cups almond milk
  • ¼ cups runny peanut butter
  • 2 teaspoons vanilla extract
  • cups chocolate chips + more for topping
Instructions
  1. Preheat the oven to 350F, and line a 8×8 pan with parchment paper.
  2. In a large bowl, combine the oat flour, almond flour, salt, baking soda, and baking powder.
  3. In a separate bowl, combine the maple syrup, almond milk, peanut butter, and vanilla extract.
  4. Fold in the wet mixture with the dry mixture. Add the chocolate chips and spread in the pre-lined pan. Sprinkle some extra chocolate chips on top and bake for 10-15 minutes, or until toothpick comes out clean.
  5. Cool for 20 minutes before serving.
